I know what you’re thinking, Queso Fresco Salsa? Don’t knock it until you’ve tried it and honestly I thought the same thing the first time I had a taste of it. It’s spicy, creamy, tangy, and super addicting. Of course, this is my mom’s recipe I learned a few years ago. Since I’ve been making this salsa I have never had leftovers, it’s that good! But hey don’t take my word for it try some yourself. Let’s get started!
First things first, cut the red onion into thin half circles and let soak for about 20 minutes in lime juice or until the onions start to lose their color. This is a very important step. I use about 6-8 limes as it should cover about half the onions. Turn onions every few minutes to coat so they may soak evenly.
Now that our onions are done we shall add the rest of the ingredients. Make sure to mince the habaneros very small to get a smooth spice. Use a glove or a bag to protect your fingers if needed. I try very hard not to touch the core or inside of the pepper if I’m not using protection as it is quite spicy.
