Pistacho Gorgonzola Crusted Halibut

If you love a good halibut you should try out this recipe. I will warn though, that getting the cheese crust right without overcooking your fish is a bit tricky but definitely worth the hassle. It’s not every day I have halibut because it can be usually hard to find and overpriced or even maybe both. So I had to learn how to cook these fillets right and make them really special.

You can try this on just about any fish. I’ve done a goat cheese crust before that also came out amazing. Don’t feel like you always have to follow recipes to a T. If you have pecans instead of pistachios go ahead and use them instead. That’s the art of cooking!

 

First, you’re going to need to find good garlic butter. I make mine from scratch but you can cheat and look for garlic butter at your local grocery store and just melt it. Or you can also use my lemon garlic butter recipe here if you would like one from scratch.

Ingredients  

  • Garlic Butter
  • Salt and Pepper
  • 4 Halibut fillets 
  • 1 cup of Gorgonzola cheese 
  • 1 cup of Pistachio nuts

Now that you have your garlic butter carefully drizzle it onto your halibut and season with the salt and pepper, save half of the butter for plating. Next, chop up your pistachios and mix them with the gorgonzola. Rub a nice layer of pistachios and cheese over the fillets.

The hard part is getting that delicious cheese crust while cooking the fish just right. I tend to check on my fish while it’s cooking as it is so easy to overcook fish. If you are going to pull your fish out to check on it. Make sure to close the oven and keep it at the set temperature.

Your oven should be at 350°, bake for 15 minutes at 350°, and then broil on high for about 5 minutes or until the cheese is golden. As it might take an extra minute or two to get it golden, after you start the broil you must keep an eye on it at all times.

Make sure your fish is on the top shelf directly under the broiler.  gently check the center if it’s too raw, switch your oven back to bake, and bake for another 5 minutes. If you like it really well-done cook an extra 5 minutes.

Lay fish over the remaining butter and serve with mashed potatoes and your favorite veggies.
