Smokey Chipotle Salsa

This is another one of my favorite go-to salsas. I make it all the time. One reason is we always had homemade salsa at all times growing up at my parent’s house. Now, I’m always so used to having salsa to go along with my food. I must have one out at all times, I think it’s a Mexican thing lol!

This salsa adds so much flavor to anything. I love it on my eggs in the morning, on tacos, and on just about anything. I also love this salsa because it’s so easy to make. Although it took me years to get it right, it’ll take you just a matter of minutes.

INGREDIENTS 

1 Can of chipotle peppers

1/2  Onion

8 – 10 Tomatillos

1 Tsp of bouillon chicken power ( or salt )

1 Bulk of cilantro

3 – 6 Small dried Japanese chili peppers

You’ll want to start by peeling and washing the tomatillos. Cut your onion and gather the rest of your ingredients. Boil the tomatillos in water along with the chipotle peppers, onion, and dried peppers. Add a tsp of bouillon chicken powder (or salt). Boil for about 15-20 minutes and simmer for another 20 -25 minutes. 

 

The sauce will darken and that’s when you know it’s ready. The trick in this salsa is to simmer it long and slow until it turns a deep red.

After your sauce is cooked transfer it to the blender. Make sure you don’t put too much water in the blender or your sauce will come out too thin. You can always add more water if it’s too thick but just remember not to add too much water. It should cover about half of the ingredients. The last step is to add the fresh cilantro to the blender. 

Blend and check consistency and also check if it needs salt. Latin culture uses chicken bouillon as salt for just about everything, but regular salt is fine. Enjoy this easy recipe over your breakfast or grilled food and please let me know what you think!
