Cilantro Lime Rice

Cilantro Lime rice

Plain rice can get so boring sometimes at times. Let’s jazz up your rice with this easy recipe. You’ll love making this cilantro lime rice as it’s super simple and full of flavor. 

 

Ingredientes: 

 

3 cups of uncooked rice

¼  cup lime juice 2 whole  limes

¼ cup of olive oil

1 bundle of cilantro

¼ tbs of onion powder (optional)

¼ tbs of garlic powder (optional)

¼ tbs of salt

¼ tbs of black pepper

First, we’ll need to make the rice. I have a rice cooker so I just press cook and in 30 minutes, I have fresh rice. If you do not have a rice cooker, just use a pot. In a pot add 3 cups of rice and 6 cups of water, bring to a boil for 10 minutes and cook for 20 – 25 minutes on low or until tender. Let rest for 10 – 15 minutes.

Next, while the rice is cooking, chop up the cilantro and use a glass measuring cup to measure lime juice and oil. I also like to add all my spices to the measuring cup. You can also just add all your ingredients and cilantro over the rice and mix. Make sure to use a silicone spatula to protect your pots. Evenly mix everything together and do a taste test, adding extra lime and salt to your liking.

For a fancy appearance, lightly pack the rice into a small bowl. I used a measuring cup as you can see in the picture, but any small bowl or container will do. Place over a plate and tap at the top to loosen the rice, and voila you have a plate of delicious fancy rice.
