If you like easy well then this recipe is for you, if you like garlic well then this salsa is for you. When I first heard of this recipe it was on an Instagram live video. The video was of a taco man yelling out the recipe as he made tacos on the side of a busy street, and I thought to myself, it’s that easy?
He started off with roasted garlic, and red chilis, blending it with tomato sauce and adding consomé which is chicken bullion or salt for substitution. I thought hmm, that must be good if someone asked to record it on the side of the road right? Well yes, yes it is! Four ingredients it’s really that simple.
Ingredients
- 1 Can of tomato sauce
- 6 – 8 Garlic cloves
- 6 – 12 Chili peppers
- 1 Tsp of chicken bullion or salt
Roasting everything to perfection is key.
Start by roasting your garlic. I like a lot of garlic and so I use 8 – 9 for mine. It is very important not to over-roast the garlic. If you do toss and start over. Over roasted garlic will turn bitter. Once that is done put them to the side and roast your peppers. Do not take your eyes off of them and move them around gently until you see a slight roast and remove them. You will roast them on high for 40 – 50 seconds. These roast super fast! I added Pequin peppers for extra heat but of course these are optional.
The hard part is done and so now we can blend and serve over everything. Someone once told me they liked it so much that they added it to their own pasta sauce. So I tried it, and it definitely adds some major flavor. When I don’t have any fresh ingredients for salsa or a sauce, I can usually throw this together in minutes.
